Irresistible Chocolate Cherry Pancake Recipe for Valentine’s Day
Happy Valentine’s Day! Or, should I say, Chocolate Day? After all, chocolate is often associated with love. According to Good Housekeeping, a staggering 58 million pounds of chocolate will be sold for Valentine’s Day. In the spirit of this day, let’s indulge in this unique recipe I experimented with some time ago: Chocolate Cherry Pancakes.
This easy-to-follow recipe is filled with bold flavors from the rich cacao powder and a delightful sweetness from the cherries. If cherries are not your preference, you could easily substitute them for strawberries or raspberries for an equally delicious twist.
Chocolate Cherry Pancakes
1 cup AP Flour
½ cup Cacao Powder
1 tbsp Cane Sugar
¾ cup Plant Milk
¼ cup Instant Coffee
1 tsp Baking Powder
¼ tsp Baking Soda
¼ tsp Sea Salt
1 tsp Vanilla Extract
Mix dry ingredients in a large bowl. Add wet ingredients. Let the batter sit for five minutes.
Place the skillet on medium heat. Melt vegan butter or your favorite oil.
Scoop in a spoon full of batter into the hot pan and allow the pancake to cook for 3-5 mins (or when the top batter begins to form bubbles.) Flip over and allow the pancake to cook for three minutes.
Add cherry syrup on top and enjoy.
Cherry Syrup
1 cup of Pitted Cherries
2 tbsp Cane Sugar
¼ cup of Water
1 tsp Arrowroot Powder (thickener)
Add all ingredients into a small saucer over medium heat. Stir constantly, until you reach the desired texture. If the syrup is too thick, keep adding one tablespoon of water until you reach the desired consistency.
